4 boneless, skinless chicken breasts
4 large portabella mushrooms, sliced
1 cup brown rice
2 tablespoons olive oil
Salt and pepper, to taste
1 head of broccoli, cut into florets
Prep the ingredients: Wash and slice the mushrooms, cut the broccoli into florets, and season the chicken with salt and pepper.
Cook the rice: Start by cooking the brown rice as it takes the longest. Follow the package instructions for best results.
Cook the chicken: While the rice is cooking, heat a tablespoon of olive oil in a skillet over medium heat and cook the chicken breasts until they reach an internal temperature of 165°F (74°C), about 6-7 minutes per side. Let them rest before slicing.
